Chris gifted me with Escarpment’s Pomona yeast, as well as a bunch of very nice hops. So let’s biotransform them!
It’s a little low in ABV, but I was able to hit mash targets much better this time—my first beer with water chemistry! Pomona is the Roman god of abundance, and Azacca is the Haitian god of agriculture, hence the name.
There was no activity with the yeast starter, so we pivoted and picked up some Thiol Libre. Similar but not quite the same, the Pomona will be harvested and used in a future batch.
